[1] Dr. Diana Nur Afifah [Indonesia] is a lecturer in the Department of Nutrition Science, Faculty of Medicine, Universitas Diponegoro, Indonesia. Her area of interest is nutrition and food product development using indigenous ingredients to improve health status. She is also a researcher in CENURE (Center of Nutrition Research) and SDGs Center Universitas Diponegoro. Her research mainly supported SDGs, especially Goal 2: No hunger and Goal 3: Good health and wellbeing. Her research was published in reputable international journals. She also carries out community service activities related to food quality dan safety.

[2] Shamim Warugaba Birungi [Uganda] is a Makerere University graduate, having obtained a Bachelor's degree in Food Science and Technology with first-class honors in 2017. In 2022, she completed her master's degree in the same field. Shamim is currently pursuing an MBA at Uganda Christian University. In 2017, Shamim contributed to three Agricultural Research projects in Western Uganda as a research assistant and field officer. She subsequently joined the Ministry of Science, Technology, and Innovation in 2018, where she served as a Science Officer for Biosciences and Bioeconomy up to 2022. Presently, Shamim serves as a Nutritionist at Kawempe National Referral Hospital.

[3] Rui M.S. Benfica [USA] is a Senior Research Fellow with the Transformation Strategies Department at the International Food Policy Research Institute (IFPRI). Prior to IFPRI he worked with the Research and Impact Assessment Division at the International Fund for Agricultural Development (IFAD), as an Associate Professor of International Development at Michigan State University (MSU) Food Security Group, and Senior Economist with the World Bank Gender and Development Group, the Africa Region, and the Mozambique Country Office. She is currently pursuing her MPhil SC, Food Science, at the University of Zimbabwe. Her work in food product development has received awards and mention. She received the 2023 Presidential Innovation Award for the 2nd Best Student Innovator in Zimbabwe. Her research mainly focuses on the development of instant complementary premix powder using locally available traditional grains in Zimbabwe. Future research is concerned with producing different food varieties from the previously under-utilised traditional grains.
