[1] Dorsilla Auma Nyamayi [Kenya] has been pursuing her Master’s in Food Science at Egerton University since 2019. She is experienced in the areas of food processing, having gained work experience of over 3 years. Her current research interest is multidisciplinary and includes food security, functional foods, product development and underutilized food crops. She published a journal article in a peer-reviewed journal and presented her findings in an international conference on Transformative Agri-food Systems. Her focus is on the development and evaluation of highly nutritious composite baking flours and baked products diversification. She also has interest in sensory evaluation of the developed products to meet and satisfy the ever changing consumer needs. | |

[2] Dr Montoeli Ashby Rantlo [Lesotho] is an agricultural economics and agribusiness expert with vast experience in various fields including academia, research, consultancy, rural and community development and entrepreneurship. He is currently serving as a senior lecturer in the department of agricultural economics and extension at the National University of Lesotho. He is an experienced consultant whose clientele includes FAO, IFAD, UNDP, CCARDESSA, SADC-TRF, SADP, WAMPP and government of Lesotho, among others. He has published extensively in agricultural economics in international journals. He holds a PhD in Economics and MSc. in Agricultural Economics from Rhodes University and University of Fort-Hare, respectively. | |

[3] Mr Alex Katola [Malawi] holds a MSc. Degree in Nutritional Sciences from The Hebrew University of Jerusalem and a BSc. in Nutrition and Food Science from the University of Malawi, Bunda College of Agriculture. He was the recipient of the prestigious Pears Foundation-UK scholarship for capacity building in the developing world. Currently, he is serving as the Research Compliance Officer of the University of Malawi Research Ethics Committee (UNIMAREC) and has taught undergraduate courses in nutrition. His professional work has focused on developing and implementing nutrition and health projects throughout Malawi, with expertise in executing pertinent national policies regarding nutrition, including outcome evaluation. He has experience in laboratory and organoleptic analyses and his areas of interest are Food Science, Nutrition and Food Security. | |

[4] Dr. Narissara Uthai [Thailand] is an Assistant Professor of Food and nutrition, Faculty of Home Economics Technology at Rajamangala University of Technology Krungthep. She holds a PhD and MSc. from the King Mongkut's Institute of Technology Ladkrabang and B.H.E. (Food and Nutrition) from Rajamangala University of Technology. She has published journal articles in international and national proceeding papers and also various international peer-reviewed journals. She focuses on the development of food processing methods that are appropriate for the enhancement of food nutrients, bioactive components and shelf life. She also has an interest in improving waste products to become valuable nutritional food or drink products. | |

[5] Dr. Maureen Cheserek [Kenya] is a nutrition and dietetics expert working as a lecturer/researcher at the Department of Human Nutrition, Egerton University. She has vast knowledge and experience in designing, coordinating, and implementing multi-disciplinary research and community development projects in agri-nutrition, food product development, and healthy diets for better nutrition and health. Her research interests are centered on improving diet quality for prevention and management of malnutrition and non-communicable diseases, youth and women’s empowerment in nutrition-sensitive agricultural programs, and improving rural agricultural livelihoods and resilience. Her main goal is to embed a nutrition and health perspective in community-based nutrition-sensitive food systems. | |

[6] Dr. Alganesh Tola Gemechu [Ethiopia] is a post-harvest technologist with experience in food safety research, intervention, consultancy, teaching and mentoring. She participated in various leadership positions at university and research centers and served as a key project officer of ENSURE E-dairy project in Ethiopia. She is an award alumna of Norman Borlaug International Agricultural Science and Technology fellowship to Pennsylvania State University, African Women in Agricultural Research and Development, Kenya and African Doctoral Academy Winter School scholarship, Stellenbosch University. She holds PhD degree in Post-harvest technology, MSc. and bachelor’s degrees in Animal production and Animal Sciences, respectively from Jimma and Haromaya Universities. | |

[8] Agbotridja Vidjannangni Dieudonné [Benin] holds a State Engineering degree in Agroeconomics from the National School of Agriculture of Meknes, Morocco. His great passion for scientific research and his spirit of initiative have enabled him to be associated, since 2016, with several works/studies in Benin. Thus, he has worked on studies related to the analysis of agricultural sectors, the adoption and evaluation of the impact of agricultural technologies and innovations introduced in rural areas, and also gender issues. Currently, he is the programme officer at CENAPEN-ONG where he deals with issues related to food and nutrition security. | |

[9] Marsiale Kamugisha [Kenya & Uganda] is a lecturer at Uganda Martyrs University, Uganda. He is currently finalizing his Doctor of Philosophy in Environmental Governance and Management at the Department of Earth and Climate Sciences, University of Nairobi. He holds Master’s Degree in Environmental Security and Peace from the UN Mandated University for Peace, Costa Rica. He has coordinated environmental activities under the Earth Charter International. He has 10 years of teaching experience in disaster preparedness and risk reduction, climate change, environment and sustainable development. He is a specialist, researcher, innovator and developer of curriculum in environment, food security, agro-tourism and human rights. | |

[10] Dr. William S. Kisaalita [USA & Uganda] is a distinguished professor of engineering at the University of Georgia, Athens, USA. He is an adjunct professor at Uganda Christian University and a Visiting (Adjunct) professor at Makerere University. He obtained his PhD (chemical engineering) from the University of British Columbia. He is directing the 3p-Innovations lab/studio through which he has mentored students pursuing income-increasing technology-based intervention for smallholder farmers. He is the author of “Development Engineering: Empowering the poor through Sustainable Technology-based Solutions. He is a Fellow of the America Association for Advancement of Science and the Uganda National Academy of Sciences. | |

[11] Dr. James P. Wirth [Switzerland] an international nutrition specialist, focusing on the design and implementation of national micronutrient and nutrition surveys, research on the determinants of stunting and anemia, and monitoring and evaluation reporting systems. Dr. Wirth is a member of the steering committee of the BRINDA project (Biomarkers Reflecting Inflammation and Nutritional Determinants of Anemia) and is a member of the HEmoglobin MEasurement working group (HEME). Dr. Wirth holds a PhD in Human Nutrition and Food Science from the University of Montpellier (France), and has an M.A. in Sustainable International Development from Brandeis University (USA). | |

[12] Dr. Shonisani Eugenia Ramashia [South Africa] is serving as a Senior lecturer and Head of the Department University of Venda. She holds PhD in Agriculture, MTech in Food Tech and BScFST. She has risen through the ranks in academia and research from the technical to the academic side spanning over 20 years since her postgraduate studies. She gained industrial experience while working with renowned value-addition organizations in South Africa. Although a new entrant into the academia, she has successfully supervised and continues postgraduate students. She has been published in a peer reviewed journal. She has attracted funding from many bodies. | |

[13] Tigist Kefale Mekonen [Ethiopia] is a lecturer and researcher in the department of Agricultural Economics at Debre Markos University, Ethiopia. She holds a master’s degree in Agricultural Economics from Bahir Dar University, Ethiopia. She also holds Postgraduate training course Certificate in food chain in Agriculture from Weihenstephan -Triesdorf University of applied Science, Germany. She has published journal articles in various international peer-reviewed journals and international proceeding papers. Her areas of research interest are Resource economics, food security, gender equality, agribusiness, climate change and sustainable rural development. [14] Oluwatobi Elijah Akindele [Nigeria] holds a MTech degree in Polymer Technology from Cochin University of Science and Technology India. With many years of research work, he worked as a Research Chemist in the Systems house laboratory of Vitapur Nig. Ltd. which is a partnered project with UNDP and he presently works as a R&D Engineer with Hira Industries UAE in the Aerofoam division. He has published journal articles in international peer-reviewed journals, and international and national proceeding papers. His areas of research interest are focused on developing environment friendly technologies with rubber, plastics and polyurethane. | |

[15] Dr. Alex Kojo Anderson [USA & Burkina Faso] is a Professor and Graduate Coordinator in the Department of Nutritional Sciences, University of Georgia, Athens, Georgia. His research focuses on maternal and child nutrition/health. He has experience in both community and international nutrition. His research activities span anthropometric and body composition measurements, dietary assessment, breastfeeding support, and infant and early childhood eating practices. He received his bachelors in Nutrition and Food Science and MPhil in Human Nutrition all from the University of Ghana, Legon-Accra, Ghana. Dr. Anderson also received his MPH (Epidemiology track) and PhD in Nutritional Sciences from the University of Connecticut, Storrs, Connecticut. | |

Dr. Fentahun Mengistu [Ethiopia] earned a B.Sc. in Plant Sciences from Ethiopian Haramaya University, M.Sc. in Horticulture from the Indian Agricultural Research Institute, and a PhD in agriculture from Boku University, Austria. Dr. Mengistu has over three decades of experience as a researcher, leader, and development professional. He rose through the ranks to become the Director General of the Ethiopian Institute of Agricultural Research. His research interests include horticulture, crop protection, regenerative agriculture, and biodiversity. He is currently the Ethiopian Country Director for the Sasakawa Africa Association, where he is in charge of promoting agricultural innovation to smallholder farmers. | |
