[12] Dr. Edna Makule [Tanzania] is a Senior Lecturer, researcher and consultant in food science and technology at the Nelson Mandela African Institution of Science and Technology (NM-AIST). Her current research interest is on: investigating novel site suitable post-harvest handling technologies for agro-foods (cereals, fruits, vegetables and nuts); effect of processing and preservation technologies on functional properties and nutrients retention; agro-foods value addition and products development. She is involved in mentoring and provision of technical support to a number of Small and Medium-Scale Enterprises in the area of cereal and fruits value additions.
