[1] Trisnowati Rahayu [Indonesia] is an academic and researcher who is devoted to the world of maritime higher education. With a doctoral qualification in Port Public Administration, she currently serves as a lecturer at the Surabaya Shipping Polytechnic and is affiliated with the Department of Sea Transportation. In addition to her role as an educator, Trisnowati is active in scientific research and development, especially in the study of blue economy potential which emphasizes the sustainable use of marine resources to support national economic growth. She also explores the integration and application of information technology in the port and fisheries sectors as part of strategic efforts to increase the competitiveness and sustainability of Indonesia's maritime sector. In the field of education and community service, she also acts as an examiner of human resource competency in the port and maritime sectors, proving her commitment to producing superior and professional maritime human resources.

[2] Bao Thy Vuong [Vietnam] completed a PhD program in Food Technology from Ho Chi Minh City University of Technology, HCMUT, Vietnam. She holds a masters degree in MBA program and a Bachelor of English studies. She is currently working as Dean of Health Sciences Faculty and Head of Nutrition Department at the University of Cuu Long, Vietnam. Her research interests include nutrition, bioactive compounds, functional food, food safety and public health. She is a lecturer in Food Sciences and Technology. She is enthusiastic about teaching and intracting with students.

[3] Mahamane Nouhou Bazanfare [Niger] lives in Niamey/Niger. He obtained a Masters degree in Human Nutrition and Food Science from the Faculty of Agronomy at Abdou Moumouni University in Niamey. He is currently working on his PhD. His research focuses on Microbiology and Agri-Food Technology. Mahamane has worked extensively with integrated health centers and the NGO CADEV in vaccination campaigns and malnutrition management. He works with researchers in the fields of biochemistry and natural substances. His areas of expertise are microbiological analysis, food processing, quality control, mobile data collection, and statistical analysis.

[4] Dr. Eric Fru Zama [Cameroon] is a distinguished researcher in Environmental Science and Engineering, affiliated with the University of Bamenda, Cameroon, Africa, where his research is focused on the environmental and agricultural applications of biochar, notably soil and water remediation and soil fertility improvement. He recently served as a visiting research scholar in Agricultural and Biological Engineering at the University of Illinois, Urbana-Champaign, USA, where he focused on optimizing bioreactor-biochar systems for agricultural drainage water treatment. Dr. Zama has authored numerous publications on biochar's agricultural and environmental applications, building on his PhD in Environmental Science from the prestigious Chinese Academy of Sciences.

[5] Dr. John Edison Sempiira [Uganda] holds a PhD and MSc in Biological and Agricultural Engineering, from University of Georgia, Athens, USA, and BSc in Agricultural Engineering from Makerere university Kampala-Uganda. He has served as a postdoc research Fellow with the Bioresource Research Group in the department of Chemical Engineering at Stellenbosch University, Cape Town, South Africa. His research focuses on sustainable food and agricultural systems, particularly, the “Food–Energy Nexus”. He has demonstrated expertise in areas of bioconversion for resource recovery, food processing and preservation, design and human ergonomics, and development engineering. He currently serves as a lecturer at Makerere University.

[6] Mpenda Matabishi Adelphine [Rwanda] lives in Huye district, Southern Province of Rwanda. She has a background in Biomedical Laboratory Sciences (Advanced Diploma) and a BSc in Biology (biotechnology option) from the University of Rwanda. Awarded the Netherlands Fellowship Programmes (NFP), she pursued an MSc in Food Safety (specializing in toxicology) at Wageningen University (2014-2016). Since 2017, she has been an assistant lecturer at the University of Rwanda, College of Medicine and Health Sciences. In 2020, Mpenda received the OWSD fellowship to join the PhD program by research at the University of Rwanda, School of Public Health, which includes a sandwich component at ILRI, Nairobi, Kenya. Her research focuses on biomarkers of Aflatoxin B1 exposure in children receiving nutritional support at health center facilities in Rwanda. She is passionate about promoting healthy nutritional lifestyles with an emphasis on risk-free foods.

[7] Cátia Júlio Guilamba [Mozambique] is currently completing a Masters degree at the Centre of Excellence in Insects as Food and Feed (INSEFOODS), Jaramogi Oginga Odinga University of Science and Technology (JOOUST), Kenya. She holds a Bachelor of Science in Food Science and Technology from Universidade Eduardo Mondlane (UEM), Mozambique. Driven by a strong passion for food science and nutrition, my research focuses on developing sustainable solution to deliver essential macro and micronutrients particularly for infants, to address nutritional deficiencies.

[8] Dr.Jutarat Wattanakul [Thailand] is an Assistant Professor of Food Science and Technology, Faculty of Home Economics Technology at Rajamangala University of Technology Krungthep, Thailand. She holds a PhD (Food Sciences) from University of Nottingham, UK, MSc (Pharmaceutical Chemistry and Phytochemistry) from Mahidol University, Thailand and BSc (Biochemistry) from Chulalongkorn University, Thailand. She has published research articles in various international journals. Her research focuses on chloroplast, green plant materials, agricultural waste, bioactive compounds, lipophilic nutrient stability, and in vitro digestion of lipophilic compounds.

[9] Dr. Zelda Anne Elum [Nigeria] is a lecturer at the University of Port Harcourt, Nigeria. She holds a PhD degree in Agricultural Economics from Tamil Nadu Agricultural University, Coimbatore, India. Her research interests include food security, sustainable agriculture, climate change impacts and adaptation. She has engaged in several multidisciplinary research and has published papers in local and international peer-reviewed journals.

[10] Omobolaji Adewuyi [Nigeria] is a Lecturer at the department of Public Health and Community Medicine at Lagos State University College of Medicine. He obtained his PhD in Public Health Nutrition at the University of Ibadan specializing in maternal and child health, focusing on micronutrient deficiencies, supplementation, and their impact on maternal and infant outcomes. His research includes clinical trials and cross-sectional studies on biomarkers in pregnant/lactating women. He has received prestigious research fellowships, grants for international travel and serves on the Global Technical Advisory Board on Multiple Micronutrient Supplementation of the Healthy Mothers Healthy Babies Consortium, under the Micronutrient Forum.

[11] Dr. Okokon Okon Effiong [Nigeria] is currently an Associate Professor of Monogastric nutrition in the Department of Animal Science at the University of Calabar in Calabar. where he has been involved in teaching, research, and community service. He received a federal government scholarship in 2003 and was granted the Innovators of Tomorrow (IOT) award as part of the Science and Technology Basic Education (STEPB) initiative in 2010. Dr. Effiong is a member of several professional organizations, including the Nigerian Society of Animal Production, the Nigerian Institute of Animal Science (RAS No: 263), and the Animal Science Association of Nigeria. He has authored over 40 publications in both local and international journals, as well as conference proceedings, which have garnered more than 140 citations in the Google Scholar database.

[12] Nsabimana Straton [Rwanda] graduated from the University of Liège, Gembloux Agro-Bio Tech with a Masters in Rural Economics. He is a PhD candidate at the same university, focusing on agri-food systems and rural development. Additionally, he lectures at the University of Rwanda in Agricultural Economics and Agribusiness. Over the years, he has also worked as a consultant for various national and international organizations, contributing to research, policy development, and program implementation in the fields of agriculture, rural development, and economic analysis.

[13] Dr. Herta Masthalina [Indonesia] is a lecturer at the Medan Ministry of Health Polytechnic. She earned a Bachelor of Public Health degree from Airlangga University in 2003 and continued her Master of Public Health degree from Gadjah Mada University in 2008. She graduated with a doctorate from the University of North Sumatra in 2023. The author also conducts research and community service activities in the field of Public Health and Nutrition. She has participated in contributing ideas and scientific activities in reducing stunting in North Sumatra, as well as other activities related to Public Health and Nutrition.

[14] Hussain Mohammed Alwadani [Saudi Arabia] has recently completed his Masters Degree in Clinical Nutrition from King Saud University- Riyadh, and Bachelors degree in the same field. Developing personalized nutrition plans based on patients' medical needs and preferences in King Khalid Hospital, Najran- KSA. Collaborating with healthcare teams to integrate nutrition into comprehensive patient care. Providing nutrition education and counseling to patients and their families. Conducting nutritional assessments to evaluate patients' dietary status in the same hospital. Currently, he is Assistant Site Manager at the Gulf Catering Company in Riyadh. He plans to pursue his PhD in Clinical Nutrition from King Saud University.
